Dinner tonight, roughly 409 calories, and both filling and satisfying :)
one small sliced onion and three sliced mushrooms, fried in light olive oil, then once they were softened, i added some light soy sauce.
Whilst they were cooking i flattened out a turkey breast with an empty wine bottle (covering with cling film so it doesn’t break the breast) so it was even and cooked evenly, (you know how dry turkey can be) seasoned with pepper and garlic salt, placed it on the George Forman (you could use any grill) for roughly 3-4 minuets so i wasn’t completely dry, removed it and sliced it.
i then placed the mushrooms and onions over a serving of baby-leaf salad and dashed on a little more soy sauce to cover the salad leaves
placed the chicken on top, and garnished with a chopped spring onion
also i had some corn on the cob, which is a starchy vegetable, and a great replacement for carbs (TIP do NOT use corn as a side if you already have a carb side on the plate if you are dieting, because they are starchy)
